'Nebiø' is a tribute to both the local Piedmontese dialect and the Scandinavian origins of the Hilberg family. Like Side B, '29.5' refers to the synodic lunar cycle of 29.53 days. This is an extremely elegant and fine Nebbiolo, made to showcase the grape in its purest and most accessible form. After a spontaneous fermentation of hand-picked whole berries, the wine rests for at least 1 year on the fine lees in a combination of wood and concrete. This process gives the wine surprising depth and a silky smooth structure, while retaining the typical floral aromas of the Nebbiolo grape.
