Sara Pérez crafts this exceptional wine from a traditional blend primarily of Garnacha Negra, Garnacha Blanca, Macabeu, and Carinyena. The grapes are pressed together and undergo a slow, spontaneous fermentation, after which the wine matures for no less than 7 to 8 months in old wooden barrels of various sizes.

This results in a complex, textured wine. On the nose: dried apricot, orange peel, wild Mediterranean herbs, and a subtle smoky minerality. On the palate, it is powerful, 'fleshy' and creamy, yet blessed with vibrant acidity and a saline, almost endless finish. A masterpiece from Montsant.
