'Sul Monte' (on the mountain) is a Nebbiolo with an exceptionally refined nose and an almost floral character. The grapes come from 35-year-old vineyards on steep southwest-facing slopes, where they enjoy the very last rays of the day's sun on a white clay soil. The different plots (with names such as Ramarro and Farfalla) are vinified separately to preserve their unique character. After an extremely gentle pressing and spontaneous fermentation, the wine matures for at least 4 years, of which at least 2 years in large wooden barrels. The wine is bottled during a waning moon and rests for an additional year in the bottle before release. The result is a Nebbiolo with silky tannins and a fabulously long finish.
