Spirito - Mauzac Brut Traditional Method
An absolute 'model of its kind'. This gourmet AOP Gaillac sparkling wine is an ode to the traditional method and the Mauzac grape. The grapes are harvested entirely by hand in small crates to prevent damage. This is followed by an extremely slow pressing (Champagne method), retaining only the very best heart of the pressing. After the first fermentation on indigenous yeasts, a second fermentation takes place in the bottle, after which the wine matures for no less than 36 months sur lattes in the domain's cellars.
The wine is clear yellow with beautiful golden reflections and a hypnotically fine, regular bead. The nose is fabulously complex: aromas of green apple and pear merge with brioche, toasted bread, hazelnut, and subtle honey notes. On the palate, you experience pure elegance, a delicate mousse, and magnificent, vibrant acidity that is perfectly balanced with the ripe structure from the long lees aging. A sensational sparkling wine!
