The 'Mon Seij' is a monumental Barbera, born from a vision to give this grape a noble and long-lived character. Hilberg-Pasquero uses an almost extinct Barbera clone with small, loose bunches that ripen to perfection on steep south-facing slopes. After spontaneous fermentation (sometimes with partial carbonic maceration for extra fruit intensity), the wine undergoes an exceptionally long maturation process of at least 4 years, of which 3 years are on the lees in wood. This results in a silky smooth structure with a deep mineral and tannic complexity that only fully develops after years of rest. A Barbera with the soul and power of a great age-worthy wine.
