The Roero was once a sea, and with that in mind, Hilberg Pasquero created Gris Pomaij. It is an ode to the salty, approachable white wines of Provence, but with deep roots in Piedmont. The wine is a unique blend of indigenous white grapes (75%) and indigenous red grapes (25%) that are pressed directly without skin contact. Maturation takes place in ceramic and concrete, which provides natural decantation without fining or filtering. The result is a wine with aromas of peach and apricot, surprisingly complemented by hints of red berries. A wine with remarkable tension, citrusy freshness, and a savory, salty finish.
